KicStart Vanilla Pancakes with Berry Compote & Yoghurt
Start the day with a healthy, delicious breakfast that will keep you feeling full.
Time required: 15 minutes approx. (5 min active, 10 min cook)
Serves: Breakfast 2 Serves / Dessert 4 Serves

Meet a New Ingredient
Strawberries are a HWFL Free Food, which makes them an excellent, low effort snack or after dinner dessert. You can even add other berries (blueberry, raspberry) to create a Free Foods fruit salad.
Strawberries are now cultivated East to West in Australia. Rich in vitamin C, they are commonly eaten fresh as a dessert fruit, are used as a filling, and may be preserved in many ways.
They are exceedingly versatile! Use them in this month's “Pancake, berry compote, yoghurt breakfast” recipe. Strawberries can be enjoyed to flavour water/ sparkling mineral water with additional herbs. Rinsed, they can be thrown into your HWFL Lunch and Snack Box for a bite sized go anywhere snack. For an indulgent small dessert, you can melt a square of 70%+ cocoa dark chocolate and drizzle over a handful of these delightful fruits.
Goodness in strawberries includes very low in saturated fat, cholesterol and sodium. It is also a good source of Folate and Potassium, and a very good source of Dietary Fiber, Vitamin C and Manganese.
